You eat them by clenching the meat in between your teeth several times until it is tender and then proceed to swallow carefully. Do it slowly at first so your helmet doesn't fall off....

I think they are best beer battered and fried!

Put back the big breeders. The small ones are good ceviche, tacos, and they are good sashimi.

They are great fried. Season and dust with flower then throw it in hot oil for 5 minutes. They have a very mild flavor in my opinion. I throw back the big ones. Just caught a 21"er trolling a small 3" Rapala on sunday. He/she went back after some pics. How do you tell the sex?

Heck if it's legal to take and taste good, who cares, only take what you'll eat fresh though.

unfortunately calicos habitat is limited to coastal areas unlike many of the other gamefish that can be caught. I personally love the taste of them and occasionally would keep a couple of the smaller ones and religiously let the big boys go. When I worked on the boats out of dana on many occasions if a large jackpot sized calico was caught but didnt want to be killed we would put them in the bait tank to be sized and later released in the harbor...there have got to be some pigs in there ...

4th of July on the sumfun in 97 i was working for Todd Mansur on a twilight run and we got into the best calico bite ive ever scene...fish up to 9 pounds! Painful seeing so many want to kill the breeders...the big ones taste shitty anyways...
