Add Hawaii to your list and bring your dive chet, I think I still remember a few good landmarks. We don't have resident whites, the 20'r last year was just passing through. But I bet you can get up close and personal with a few big tigers. At least the water will be clear enough for you to see them coming.

Little trick to avoid meat loss use a chore boy to take of the black stuff then just trim the fringe, slice thin (the tip about a meat slicer is a good one) and pound till paper thin, fry fast(30 seconds a side). Years ago when I dove PL for them (ask Fredo about it) I made a board with 1/2 inch strips sunk halfway into the board slide the ab up into the notch and slice 1/4 thick steaks all day. God I miss those days.

Nice job. Diving the North Coast does take some getting used to. You have to be OK with the fact you will not be able to see much. So when your imagination gets going, it’s easy to get freaked out.
You can buy a cheep slicer at Harbor Freight for $30. Nothing fancy but does a great job on a limit. Try soaking the slices in Milk for a few hours. The lactic acid acts as a meat tenderizer, and will require less pounding later on. Pat dry, dip in egg whip, then bread crumbs and fry for 10 to 15 seconds or when the slices start to curl. Pat dry, sprinkle some jack cheese, and eat till there is none left.
Food of the gods, well until I get down to do some lobster diving that is, he he....
