Bring a light rain suit, just in case. It probably won't rain, but even in a heavy morning fog you could end up uncomfortably damp. Check their "suggested gear" on their website, and adjust down. You don't need near as much stuff as they say.
Get your tackle together sort of according to their list, then call for any last minute suggestions. They probably have colors of trolling jigs etc, to bring. Check with your local tackle shop or call the Rooster's office for their suggestions, and check again when you get to the boat if there's anything that's really been working, and pop into the tackle shop at the landing if you're lacking anything.
Bring a camera! If it's digital, bring extra batteries, and/or your charger. Bring a notepad to take notes, not only on what you caught for the day, but what worked, what didn't work, and what you wish you had with you so you can bring it next time.
I've done a couple of trips on the Rooster. Having been there, I can say that unless you're a REALLY PICKY eater, don't bother with the "munchies". There will be incredible amounts of food available all day long... they have a real chef on board, and the food was not only plenty, but excellent quality!
Big Breakfast, mid-morning snack, lunch, mid-afternoon snack, dinner... I was amazed when I got home that I hadn't gained weight, cause I was right there every time they announce another round of food in the galley!
And in between all of that, there's always fruit and other stuff in the galley as well. All included in the fare.
