Thumbs up Another Plug for Mike Burns' Fish Processing

Just came off the Vagabond 10-day with about 400 lbs of Yellow Fin Tuna, Dorado, and Yellowtail. I had pre-arranged with Mike Burns at The World Famous Smoked Fish Co. to do processing for me and 3 of my buddies. Mike was there to meet us as we arrived at the Landing.

Two of us had same day processing of our fish. One chose to trade his fish for previously processed and frozen fish of the same type. And one chose to have his fish processed, packaged, and air freight shipped to him in a few days.

The quality of the processing is outstanding. Each fillet is skinned and then is double bagged and vacuum sealed. It took a little time to process our fish for same day service because our fish were frozen, but they waited to process it so it could be cut properly.

We also traded for some smoked fish and sampled some of Mike's smoked product - it too was very good. Im looking forward to serving that during the holidays this month. We traded 100 lbs of fish for previously smoked fish for $100. Thats about $4-5/lb for smoked fish thats also vacuum packed in nice size chunks and pieces.

Bottomline is this ... you cant beat the 10 cents/lb processing charge for filleting, double bagging, and vacuum sealing. He even tossed in all the ice we needed and some dry ice too since we were travelling from San Diego to the Bay Area home. With 400 lbs of fish I got out of there with a $40 filleting charge. That was a pleasant way to end a great fishing trip.
