The bigger tuna 40-100lbs yield about 45%, smaller tuna yield less. 5 star is top notch, don't scrimp..........

5 Star is definitely the way to go. Though the 75 cents per pound in the round might seem spendy, when you are pulling sashimi grade tuna out of your freezer 8 months after the trip, you won't regret it. Customer service is absolutely the best. For those of us not living in SoCal, there is not really a decent alternative unless you want to run 20-24 hours on the highway with big coolers, and cut the fish yourself and vacuum pack in more delicate Foodaver packaging. And that's still not a good alternative.

With 5 Star you get integrity, service, and industrial/commercial quality packaging that will survive a year's worth of rummaging in the freezer. It's a no-brainer.

Pricing on whole fish -
To fillet & vacuum seal fish - $.75 (on the whole weight of the fish).
To fillet, Smoke & vacuum seal fish - $1.25 (on the whole weight of the fish).

Do it.

Sounds like 5 Star is the way to go for processing fish for storage. What about fish that gets eaten in the first few days of being home? I hope to be coming home from an 8 day with enough fish to give away and that will get eaten probably that night. In this case, ziplocks are fine.

I've also heard a few people mention donating fish. How do you accomplish this and where?

You can donate 1 of 2 ways. Leave the fish with 5 Star, they will give you a receipt for bulk market rate on the fish. At this point the IRS deduction is up to the price of the trip. Or I have had the fish processed and donated the fish to several charities that help feed people at the "sashimi grade" market price. I had the IRS question this and there good with it. Again you can only deduct the price of the trip. I like doing it this way as the fish goes where I want it to .
