It is very easy.
Get a good high quality pressure cooker (I got one that will do 16 pint jars from AMERICAN PRESSURE COOKER CO for 90 bucks). It came with instructions -- or you can do a search for "canning tuna" and you will find more info than you ever wanted.
Go to Walmart for pint size jars and lids (with the wide mouth) -- put a half teaspoon of salt in jar, add fish, add water, squeeze air out, leave 1" gap at top, wash lids in hot soapy water; rinse off and place on cleaned jar top; screw down cap hand tight; put inch and a half water in pressure cooker; put first layer of jars on aluminum plate (provided); now next layer on another aluminum plate. secure pressure cooker and add heat until it vents steam for 7 minutes, then add no. 10 weight and start timer once weight pops first time . adjust heat until weight pops only 2-4 times per minute until times up in 110 minutes.
This is the simplest method there are many more techniques you can try. Better than any tuna you can buy in the store.
