I think you gotta have skin on just about all upland birds and waterfowl. Thats just my preference the fat really helps the flavor. I'm going to have to try the mexican ducks I've never heard that one before. The cranberry wine reductions flavor is a great compliment to the duck the strong flavor really holds up well to the duck.

Now that the season is back I figured it's time for this post to come back.
Cleaned and waxed 7 teal in 25 minutes yesterday. Waiting for the wax to warm up took the longest.

Well I'll be pluck a duck.
Here's another to try. Take your favorite duck and cover it with bacon strips.
Next, before you toss it into the oven split a Pomegranate and crush it in your hands like you would half a grapefruit over the entire thing.
Once cooked shake off the seeds and bacon. The bacon tastes real good too but I like to finish frying it up.
You'll be surprised how un-ducky this will taste.
