In Colorado we just hang them in the rafters for a few days in the barn. But it doesn't get cold enough here to do that. I think aging it in the fridge is the best way out here. Tell your daughter congrats on the deer.

I will bro, thanks...by the way the 3 day fridge-aged backstrap was fantastic, I just ate it an hour ago. I think I will age the rest of the cuts till tomorrow.
