Hey I`am going to butcher some tomorrow ,for this old guy who raises them ,I wonder if any of you have ate some he told me they are like beef and there is hardly any breast meat

Yes, it is good. Dark meat, but very lean. Grind it, smoke it, wrap it in bacon, etc.
A lot of guys bought into farming those things 10-15 years ago and lost their asses. Too much work for the amount of meat (in processing) they have on them compared to cattle, hence why they never quite made it in the market.
Anyway, enjoy it.

I've had ostrich which I'd imagine is similar. Red meat like beef. Very mild flavor but a bit tough. All leg meat. No breast since they don't fly.

There's an Emu farm close by here where I got my Ridgback. They gave me some in the hamburger form. It was alright but I'm not going to start raising them.
