Need a good butcher shop in N. County

I am leaving to Montana tomorrow morning at 0300. Last year I took the meat to T and H is San Marcos it was OK but I am looking for something better.

If I am not counting my chickens before they hatch and I dont cure myself I should have at least one deer and one antelope. Thanks guys, I will post the report when I get back.

T&H has always been over-priced. About five years ago their quality control started slipping big time. I found Bishers and have been very happy. They don't do any fancy stuff, but they are quick, clean and priced competitively.

We butchered our deer in our garage using just hacksaws for quarting and fillet knife for boning and steaking. It took about 3 hours for 3 of us and 2 deer, including making burger. For the past few years we have been using a local butcher (in vegas) who did a great job, but you can really see the love in our cuts. From now on we will be doing all of our own.

It was very simple once we got in and just started making cuts. The best part is you know you are getting all of your own meat and you trim all of your steaks, ready to cook.

I agree with Sixty, if you have the space to do it yourself, them do so. Get afew friends, some beer, and turn the radio on. Only thing about doing it yourself is you have to find a place to throw the discarded cuts away. Here in Alaska we freeze it and use it for bear baiting.

I feel it is part of the game ,to butcher my own ,this way I know I`am getting back my game ,and I can cut it the way I want to ,I now grind my own animals ,it only takes a good hour to butcher a deer that is taking every part of the eadable animail off the bone you can .........

Tip Top Meats on Paseo Del Norte in Carlsbad will process game, but I have no idea about quality or price. If you're from Oceanside, you probably have time to go chat with them.
