Yes, Bishers will process your game meat and do a good job. I'd be tempted to take the Sirloin roast off the hind quarter and then either make jerky or grind the rest. In the past I've also made sausage from deer and elk.

You can go to The Sausage Maker, Inc. - Sausage Making Equipment & Supplies and they have all the casings and premixed spices to get the job done. I've been buying from these guys since the early 80's and always been happy with their stuff. Their Summer Sausage mix is killer and that what I used on last season's deer.
