I have never made pachi where it was not mushy. Thinking I was not keeping my catch correctly, I tried brining, directly on ice, in a 5 gallon bucket w/seawater for a while then ice...she no go. Tried frying, baking grilling too. Is the flesh just not firm? Otherwise, taste good.
Any suggestions?

Menpachi have very soft delicate flesh, most people just use salt and pepper and fry them, some people cook them Japanese style with shoyu, sugar, ginger and put it over noodles. Really good eating, just a different texture compared to ono or ulua.

oh yeah one more thing depending where they are from some come like a rubber slipper when you cook it, no matter how long you cook it. We had some from Laupahoehoe that were just like that. Once you put them in the pan they curl up, no hope just toss it out and try another.

I'll take Aweoweo over pachi any day. To me the flavor is much better and on top of that no need to scale em! Jus butterfly n fry! Mmmmm crispy skin.
