Chilaquiles - cut up corn tortillas like chips and fry em I like mine a lil crunchy around the edges. lil onion, cliantro,and some chiles if you like it hot, then add the egg. when the egg is done pour in the already heated up El Pato sauce. sprinkle some chesse on the top and enjoy. you can also make heuvos rancheros very easily as well.
throw a corn tortilla (whole) on some oil. fry it then throw it in the other pan with the El Pato sauce in it, throw it on a plate sprikle wit cheese, and repeat ,next fry two eggs oveer easy, throw them on top of your stack of tortillas & cheese and enjoy.

Use about 12-15 corn tortillas, cut in quarters or eigths.
Fry in hot oil until soft, just starting to get crisp. Remove with a slotted spoon and transfer to large stock pot.
When all the tortillas are fried up and in the pot add 1 Large can red chili sauce (enchilada sauce) and about 2 cups of cheese and 1 can of sliced olives drained.
Put pot on burner on low, cover and stir periodically until mixed well and cheese melted.

Dish it up and serve with refried beans, and crumbled ranchero cheese.

we like the green sauce...

6-8 tomatios (sp?)
1 onion
4 garlic cloves
2-3 serrano peppers
a bundle of cilantro

Boil the tomatios, onion, serrano's and garlic. when done take them to the blender/food processer add salt to taste. If the salsa is too thick you can add a little water that you boiled them in.

Cook/fry the tortia chips as mentioned above.
Take the chips to a deep pan/pot and pour the sauce over the chips.
fry up some over easy’s and top off with chopped up cilantro and sour cream.
