Talking Where is Roxy?

Hey Roxy! Are you OK? Now that I cooked all the Elliemay specials, I am getting fat sitting on my ass with this broken arm. Do you have anything fabulous for me to make that is low in calories? I went to the Fred Hall show and ran into a BDer friend of mine, he introduced me to his friends, as the famous Elliemay, from the Elliemay special post by Roxy! Pretty cool.

Oh I am here. Running errands, you know the routine.
We have decided we are way too fat and not too happy about it. Soooooooooooo, on to less carbs, more protein and veggies. Here is one for you that is really good. Had it last night.

Make a marinade/dipping sauce with 1/2 cup honey, 1/2 cup soy sauce and wasabi powder. I used a few tablespoons (not the green stuff, buy it in the seasoning department, looks like a white powder). Stir in.
Marinate some Ahi for about 4 hours, then grill about a minute or two on each side on the BBQ on High Heat.
Rare in the middle. Let stand a few minutes then slice up.Use the remaining sauce (take some out before you marinate the fish)to dip. WONDERFUL. You can use the marinade for chicken too, of course fully cook the chicken.
For a side dish, I shredded 1 head of savoy cabbage, the kind that looks like krinkled romaine.
Thinly sliced 1 red bell pepper and threw it in. Then put in about 1/2 cup of mandarin oranges.
Got some Asian Sesame dressing (cardini's) about 1/2 cup and added about 2 tablespoons of peanut butter, mixed well.
Dressed the cabbage and we had the side dish. The dressing would be killer on some asian cooked noodles, cooked and cooled.
No rice, although it would be great with it.

I ended up not winning or even placing 1-20th in the recipe contest for the Fred Hall show. Oh well, try try again.

I will post the recipes here most likely next week.

This one is going in my book of go to's. It was really good and super easy.
Mike, just print out the recipes, and BOTH of you make an evening of cooking together. Once you start cooking and getting the hang of timing and ingredients, it always gets better. Or better still, we will have to have you over for dinner.

Still on the hunt for a bigger WSB.

It isn't easy Terry. I haven't so far but I'm so sick of eating out, I'm willing to try. Maybe Bob can help me.
Thanks Roxy, Sorry you didn't place at the show. Those judges must have been crazy not to pick you!

as far as the ahi tuna recipe, that is the beauty of it. VERY easy and so is the side dish.

You're right about cooking together, we do it all the time.
The wife and I cook together, sort of, I BBQ outside with the dog and she stays inside - Works great... Just kidding we do have as much fun cooking as sex and it lasts longer!
