Lobster Pasta Salad

The guys at work have been buggin' me all season to bring them in some. Finally i caught more than one dinner so donated 5 lobsters to put together a lobster pasta salad. Just bought a bunch of stuff on sale at the store plus followed a Greek theme. Here's the ingredients & directions.

5 lobster tails
Old Bay Seasoning 6-7 tbsp
24oz tri-colored rotini pasta (spirals)
2 large orange bell pepper
2 large red bell pepper
1 large red onion
1 bunch asparagras
1 small box of grape tomatoes
20 pepperchinis
20 greek pitted olives
fete cheese
fresh thyme
dried oragano
1 cup olive oil
1/2 cup red wine vinegar

Remove the tail from the head by twisting and pulling. Pot just big enough for three tails. Add tails and fill with just enough water to cover tails. Remove tails and set aside. Add 6-7 tbsp of Old Bay Seasoning. You can get a 16oz can at Smart&Final for $7. Bring to a boil. Add the 3 tails or 2 large tails. When water comes back to a boil, boil for 12 minutes. Remove tails. Let cool for 5 minutes then wrap in aluminum foil. Cook remaining tails in the same hotwater. When all tails are wrapped and cooled place in the frig for 24 hrs.

The next day, boil the pasta a dente according to directions. Drain and let cool in the drain basket.

Add all these ingredients together in a large bowl. Add Pasta. Chop bell peppers into 1/2" squares or there abouts. Cut the red onions thin and then into 1-2" threads. Add grape tomatoes. Steam asparagras for 5 minutes, cool and chop into 1-2" pieces. Add spices. Cut lobster into 3/4" pieces. Add pepperchinis and olives. Turn over with a large slotted spoon to mix throughly. In a large measuring cup add 1 cup of virgin olive oil and 1/2 cup red wine vinegar. Mix with a fork. Add slowly to salad and turn over a bunch of times until the salad is mixed. Add salt & pepper to taste. Cover with heavy duty aluminum foil and place in frig until serving.
