Macademia Lime Opakapaka

Went to the local fishmonger this morning and asked him for sumptim' special for dinner tonight.

He asked..."Have you ever had opakapaka?" Venturing quickly into the Samoan/Maori part of my heritage, I replied..."No."

So he sent me home with this




So I added a little of this




ANd came up with this





So i crushed some macademias, set up a grill skillet with some butter, canola and lime juice, oiled up the fish and cracked fresh pepper and lime juice. In the meantime i sauteed some crushed macadamias in butter and packed them onto the top of the fish. I rendered some pancetta in a heavy grill pan and removed the pancetta when done. Poured some white wine and any lime juice i could scrape up into the grill pan, placed the fish onto it and and put the whole thing into a 450 oven for 9 mins.

Set it on top of a broccoli/carrot julienne with some radichio, plated some carrots/ green beans/ asparagus/bacon/shallots and poured the pan juices over the whole thang!

Had a nice fume blanc with it. Joyce is happy!

Macadamia nuts are something I may have never thought to use in a fish recipe! That looks damn good!

i use the same receipe but i add a coffee reduction sauce. brewed coffee reduced in a sauce pan with honey to taste.
