WHY IS IT

that folks have the urge to wrap BACON around seafood?
I would like to know the bozo that started this whole thing.

During the last several weeks, I have had more folks come into the shop,
And buy our U-6 scallops, heck even the U-4s and they say,, Oh, these are going to be so good wrapped in Bacon.... wrong, and I have to ask the question....

can Pigs even swim?

the huge commercial super stores sell I.Q.F. scallops that are treated with T.S.P. and water injected, which turns em all the same bleached out white color,, now those are good for wrapping in bacon, but not when your paying $14 or more a pound,,,

Then we get to the mexican white shrimp, this is the very best in the world, and folks want to wrap bacon around em.. What gives here with the seafood and bacon????

Which brings me to my next question,,,,

why do some people buy fresh then put it in a frezzer. I mean whats the point??? I just had a guy buy 10 pounds of Seabass then ask to Vac/Pac it..... we got fresh fish everyday,,,

Thank you for your time on this matter and i,m looking forward to serving you again and again....

I agree Tommy probably the only acceptable side to those scallops is a nice bone in ribeye with some essence on top grilled rare. I gotta come see you for some seafood.

It holds the pepperjack cheese and cilantro flakes inside the shrimp. But use the "low sodium" Farmer John (it's very thin) and cut off the fat.

Pork Fat Rules but yes, not on seafood.

Heck, for that matter, most seafood is best served raw and on it's own.

Maybe a little wasabi and rice.

Because......
Bacon goes better with Ketchup
