yes pigs swim. at least the one george dated does.

bacon wrap around something that is dry might be the reason. to make it savory ie; beef tenderloin, etc.

PORK IS MY FRIEND

I would throw Yellowtail in the trash to get at a slab of slow smoked ribs

Tommy, all kidding aside, most people wrap scallops in bacon because----

MOST overcook scallops. A little grapefruit/mignonette marinade for about thirty minutes, then either sear in a little butter/olive oil or grill for a minute or two each side is ALL that is needed.
Scallops when cooked properly are buttery, tender, and with a delicious sweet flavor.

Bacon wrap is for beef with an intense flavor. Don't get me wrong, I love bacon, but scallops, in fresh form are delicate and sweet, only seasalt should be used to season along with the mignonette.

I usually ask the restaurant to deliver my order without the bacon wrapped around it. Who wants a filet with bacon wrapped around it? It totally takes over the flavor. Now a BLT sandwich is da bomb with fresh tomatoes from the garden. mmmmmm

I need to get over to see you this week for some shrimp. Will call ya beforehand.

I think it started in Texas with people wrapping dove with bacon and when they tasted some of those over seas preservative soaked shrimp they figured it might help plus it holds the jalapeno in place when there on the grill but good scallops that’s a total waste.
