Bacon is salty and salt is the universal flavor enhancer. That's my opinion and if you really want to pull the flavor outa something just add salt...

The whole fresh fish to the freezer thing stumps me...

Tommy,
Thanks for the hookup. You rock. Showed up Saturday morning and I ate crab and scallops all day.
SO that is what scallops are supposed to taste like.

Smoked, salted pork fat is very good if you want to cover up something else. Most store bought scallops (seafood in general) smell bad and taste worse. The bacon is a great mask.
Bacon wrapped anything at a restraunt is just left overs. Kinda like spicey tuna rolls. Last weeks cuttings from the sashimi mixed with hot sauce.

Once again Tommy, you rock.
You may want to keep some of the older and moldier scallops for the pig wrappers. They will never knwo the difference...

And yes, pigs swim. At my house they swim in soup and gravey. And on occation in the worlds best mac and cheese. I challenge all.....

I don't know either, I think it takes over the flavor. I have never mixed bacon with seafood. I have had it at weddings!

Yes pigs can swim.......................They thrash around alot, but thats what you want when your shark fishing.
