I have so much fish in the fridge. Probably thaw out some wahoo, but nothing sounds great.
Fish grilled, BBQ, soy vay, tacos, sammiches.
I need something new gauranteed to be enjoyed. Anybody got any good suggestions that arent too difficult?

So, I've been making some incredible meals, thanks to Tommy and that wonderful shrimp.
Most times, I clean up the shrimp, place them 2 to a sprig, and saute them in butter /garlic. (very little butter....finish them up with a squeeze of fresh lemon and a light sprinkling of "GUAPO" seasoning.....)
well, yesterday as I was preparing for dinner, this lonely looking WSB fillet was just calling out to me from its cold home in the freezer.......so I took pity on the poor fillet and defrosted.
While stringing up the shrimp, (which is a an oxymoron in this case......), I cubed up the WSB and put pieces on the skewers, prepared the same way.
Oh man, it made the shrimp taste kinda "everday"..........wow. Pics next time.......it wont be long.

Rinse fillets in water.
Dry with paper towel.
Dip in Egg yolk.
Place in gallon ziplock bag with Progresso Italian Bread Crumbs.... and shake to coat evenly.
Fry in skillet with 1/8" hot oil in the bottom of the skillet until light brown in color.
Can also be baked following same directions except bake at 350 until brown instead of frying.
Good Stuff!

Some easy ones..
For Yellowtail & Dorado, rub with olive oil, hit with seasoning salt, paparika, grill. Works well with Yellow Fin Tuna but I also add garlic.
An easy, good one for albacore. Put bacon in microwave for 2 minutes. Cut albacore into fish stick slugs. Wrap bacon on albacore and pin with a tooth pick. Maranate in Lawry's hawaian or terriyaki for an hour. Grill and watch your fingers. People go crazy for the shit.

I have heard poaching any rock fish in 7-up and then frying in butter is absolutely fabulous!!!

Someone posted this a while back. I have not used the cedar planks, just put in a baking dish. I have used a couple dif fish and it is good, really good.
2 jalapenos, cut into rings
1 tablespoon garlic, minced
1/2 cup white wine
3 tablespoons whole-grain mustard
1 cup apricot preserves
4 (4 by 4-inch) pieces parchment paper
4 cedar plank pieces, food service quality
4 (6-ounce) salmon fillets, skinned and boned
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
4 (3-inch) fresh rosemary sprigs
1 lemon, zestedPreheat oven to 400 degrees F. In a small saute pan over medium heat, heat oil. When hot, add jalapenos and saute until caramelized. Add garlic, and before it begins to brown, deglaze with white wine. Next add mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes till the sauce thickens, and let completely cool.
Place parchment paper on planks, add salmon, lightly salt and pepper, place a rosemary sprig on each fillet, and liberally apply cooled apricot mixture.
Place cedar plank on gas burner. When plank has begun to smoke, place into preheated oven.
Cook salmon until medium-rare; remove from oven and let sit for 2 to 3 minutes until serving. Garnish with lemon zest.

Very EZ and really good.
Equal parts butter, brown sugar and soy sauce.
Lemon juice, tabasco and garlic for extra zing. Never fails.
Oh yeh, grill it.

1/4 cup pineapple juice and 1/4 cup lite teriyake . cut fish into 1" chunks and soak for 1 hour. skewer it up with pineapple chunks and grill 5 min.

Piece of parchment paper about 18" square. Place fish on paper, little olive oil, salt pepper. Slice up two garlic cloves, little bit of onion if you like. Slice up a lemon and place on top of fish. Wrap edges of paper over each other until sealed. Bake 350 for 10-12 minutes. Open and enjoy.
