Crab Stuffed Shrimp Recipe Request's

The wife wants crab stuffed shrimp for valentines day Since I am gone a lot I figure why not.....At least I don't have to buy her anything.

I have never had it before, but she had some when we were in Mex this last summer and hasn't stopped talking about it.
I have done the search on google which has produced some good recipes. I'll probably bake'em instead of frying and keep them simple.

Does anyone have a tried and true recipe? If so, please post. If not.......I'll probably do write up later.

I saw Paula Deen make this once and I tried it and came out pretty good. The only thing I did different was use Ritz crackers instead of regular crackers cuz that's all I had at the time and was too lazy to run back to the market.

Go to epicurious.com - search "stuffed shrimp" try Dan's baked stuffed shrimp. Pretty similar to the way I do it, but I don't use a recipe. Also worth trying is to take colossal shrimp, wrapped w/ bacon marinated in sweet chili sauce (that red stuff for dipping at thai restaurants). Less time consuming and probably more tasty, plus it will leave more time for tossing her...i mean the salad.

Large shrimp
1 pc bacon for each (microwave about 3-5min until pliable and almost cooked)
1 bottle sweet chili sauce
something spicy ie crushed chilis(pizza flakes), spicy chili paste or sirachi sauce etc etc

combine chili sauce and spice to taste, set aside
clean shrimp and wrap w/ bacon, secure w/ tooth pick, skewer
cover shrimp w/ 1/2 chili sauce, marinate for min 1/max 24 hrs
fire up the grill and cook for 2-3min / side brushing w/ remaining sauce

If you have a good crab cake recipe, make that, form into 1" patties, and lightly sear. Cut shrimp deeply down the back, stand 'em up in a lightly oiled saute pan (oven proof), so the tails are up in the air. Place a crabcake on the head end of the shrimp, so it is tucked into the center of the arc. Place in 350 degree oven until shrimp are just cooked through.

Get large shrimp. Butterfly down the back. Place a dollop of crab on top where it curls, add a small chunk of pepperjack cheese. Wrap in bacon with the tail out to hold it together. You can then fry it in a pan until the bacon is cooked or deep fry it until done.

Thanks guys. I think I might just take a few recipes and mix them together and create my own. But in the mean time the search continues. I think I want to keep them simple.....I have seen some recipes that seem to have too many ingrediants and I usually like the simpler ones that let the seafood taste come through.

Here's simple; Have tired--is good--quite filling

Stuffed Bacon Wrapped Prawns

1 dozen Prawns (or Large Shrimp)
1 pound of crabmeat
1 pound of bacon
Blackening Seasoning
toothpicks

Directions:
Prepare your grill to about medium heat. Split the prawns down the middle being careful not to cut all the way through. Stuff the middle with just enough crabmeat to fill the cavity. Take a slice of bacon and wrap completely around the prawn. Stick a toothpick on each end so that it will stay together securely while grilling. Sprinkle generously with the blackening seasoning. Grill over medium coals for 5-10 minutes, turning 2 or 3 times or until the bacon is crispy and browned. Serve immediately.

CAJUN BLACKENING SPICES

5 teaspoons paprika
1 teaspoon ground dried oregano
1 teaspoon ground dried thyme
1 teaspoon cayenne pepper
1/2 teaspoon finely ground black pepper
1/2 teaspoon finely ground white pepper
1/2 teaspoon garlic powder

Mix together and store in an air-tight container.

But you can get Blackening at any grocery store in names like-- Cajuns Choice.

I just wanted to thank everyone for your feedback. We ended up doing the dinner last night because we are leaving for Mexico on Valentines Day. It was tough figuring out which recipe to do so I did 3 of them

Anyway, here is what I ended up doing…….

Chaums Recipe:
But instead of pepper jack I used provolone since that is my wife’s favorite cheese. They turn out great, but the bacon was a little over powering.


T=Rex’s Recipe

DOOOOOD, this recipe rocks! The Cajun Blackening Spices were great. Since I grilled them I hardly tasted the bacon. This was my favorite recipe of all! I plan on using the Cajun Spices on other meats as well. Thanks again!

Online Recipe:
They were baked in the oven and stuffed with a crab cake type mixture. These were good, but all the yummy stuffing fell out.
