Fish Tacos

I just caught a TON of rockfish with my family, and I really want to make some GOOD fish tacos. I'm not really good at cooking anything cuz I'm still a teen , but some fish tacos will do me good. What are your favorite ways to make the ENTIRE taco. This includes all of the vegies, what kind of tortilla, and what kind of sauce. Basically, I would like a step by step informative guide on how to cook some delicious fish tacos.

how hard is it. since i think ive seen you on the dolphin i will tell you. take some miller genuine draft and pour it in a bowl. take a good quality fillet (get it done on the boat) and soak it in the bowl. take some fish batter (you can buy it at ralphs its called fish fry) and put that in a bowl. after 15 minutes of soaking the fillet put the fillet in the fish batter. make sure that the fillet is covered in the batter. heat up some corn oil (very hot) and put it in. let it fry for about 5-10 minutes on the 1st side. flip it over and fry it for about 4 or 5 minutes. take it off and put it on paper towels. if you want to make a special sauce while its cooking you take sour cream, all natural yougurt and a spoon ful of salsa and mix it and you have fish taco sauce. cut some cabbage up and put some mexican cheese on it and there you go a rubios style fish taco. and dont forget a flower tortilla. fish taco making 101

I would start by going to a mexican food chain or market. There you can buy fresh queso (mexican cheese) and crema de leche (mexican sour creme not milk). I would also buy raw tortillas and cook them yourself. Really makes a difference. Some of the low carb tortillas are also really good (soft). Go figure. There are several ways to deep fry your fish. Lately I have been cutting the fish into small taco size pieces and cooking them hot and fast in butter. The idea is to get the fish a nice brown crispy carmilized outer without over cooking the fish. It is a nice alternative to beer battered, corn meal, pancake(also good) or other deep fried recipes. I like to make my own salsa but it can be a pain in the ass. A really easy way to make a good quick salsa is to take a large bottle of pace picante and mix it in a blender with a whole head of cilantro. Sounds wierd but it is outstanding. You can also add a little green onion in the blender. Dice or prepare some onions (green or white), jalepenos and or serranos, tomatoes, cilantro, cabbage or whatever you like. I like to take red and green cabbage shreeded and mix it together with a little salt and lemon juice. Jesus I'm rambling. Cook your totilla and add your fish, crema de leche, queso, pickeled cabbage, quick homemade salsa, onions, peppers, cilantro, tomatoes, whatever. Makes a great fish taco. If you like a little spice you should really try adding some sriracha. This asian hot sause is excellent on fish tacos. Gives them a real distinct taste. Congrates on all the fish. Enjoy.

Oh I almost forgot

Fish tacos go really well with michaladas. Not sure on the spelling. A drink made from beer, limes, and hot sause, on ice. I fill a glass about a 1/4 full with fresh squeezed lime juice, fill the rest with a mexican beer. Add a little salt and pepper, couple drops of worchestershire, and hot sause. This is served on ice. I use tabasco but tapatillo is more common. Same idea as a bloody marry made with beer. Sounds different but in my opinon there is nothing better.

I just realized you probably won't care for the michalada recipe. Not quite drinkin age yet.

alright Andy this is how i do it. very easy and cheap.
youre goin to need:
1 cup of flour
1 tsp of baking powder
lil bit of cayanne chili peppr
2 cups of ice cold water
a bowl to mix it in and a bowl of ice water to dip your fillets in before you dip them in your batter.
Now mix the flour,powder, then throw in some off the chili powder jus enuf to dirty it up a lil. add ice cold water until you get a nice semi thick batter.
Now dip your fillets in the ice water then in the batter and gentley set them in a pot w/hot oil. it should fall to the bottom of the pot , let it sit there for bout 30 secs then simply scrap it off the bottom. it should float to the top. roll it over for a lil then place it on a plate lined w/a paper towel.
regular CORN tortillas. radishes, cabbage, onions (grn), cilantro, and a packet of HIDDEN vALLEY mixed with mayo & milk just follw the directions on the back. you can add queso fresco and any other hot fixings of your choice.
thats basically it. enjoy

I like

1. hard shell corn tacos
2. mexican shreaded cheese
3. chopped lettace
4. chopped tomato or salsa
5. tartar or tomateo sauce
6. hot sauce

Fry fish strips the size of tacos in Shirakiku Panko Flakes in 1-2" of oil. panko found at Vons, Albersons, other. Just follow the directions on the clear cellophane package. Buy a thermometer in order to fry at the correct temp (350-375 degrees). Do not crowd the fish in the oil or the temp will drop too low and will suck in the oil.
