| Swordfish---
With the special Tommy had on swordfish, I really wanted to get some. Alas the 4 hour trip down and back had me hesitant today. Was at Trader Joes and they had some, I am sure not as great as Tommy's but it will do.
Just got the mango salsa made and it is in the fridge
1 ripe mango, skinned and cut in dice
Add about a tablespoon of fresh ginger, minced
Add 2 fire roasted serrano chilis (I remove the seeds) small dice
(I put them on the cast iron tortilla pan and blacken, then rest in a baggie wrapped in paper towels until cool)
Add 2 tablespoons olive oil
add 1/2 small red onion diced
Add 1 small bunch cilantro chopped
Salt and pepper to taste.
I will use the white wine, herb, olive oil marinade, then squeeze on a little lime on the fish when I remove from the grill
Having a nice rice pilaf side.
