How long do you boil you lobster tail, or how do you know when it's done.

If I boil, its always the whole lobster so there is no water intrustion. Salted water is best. Personal preference as to time, I like my food al dente, so 3-5min for smallish and 5-8 for larger. I prefer Puerto Nuevo style, or shuck the tail for pasta, salad, sashimi, saute for tacos etc. Check out foodtv.com But if your bent on boiling tails only, ~5-7min

Yup boil in seasoned water for about 8 minutes, give or take a minute for size. Put in the water some crab or lobster/shrimp boil, a whole lemon squeezed, cut and toss in rind and all.
Then remove the whole bugs and drain. When cool enough to handle, pull apart and eat or cut the tails in half lengthwise, sprinkle with a little old bay and a brushing of butter and broil the tops until golden.
That way you can boil the whole bugs, split and save the tails and use the balance of the goods for bisque or soup.

I know it's kinda late, but if the tails have already been removed from the bug. I prefer to steam them. Throw some old bay seasoning in the water. Steam for about 5 mins. If the tail has been butterflied then it will be easy to tell when they are cooked. The meat turns a bright white and begins to separate from the shell. Also the shell will turn a bright red color. After steaming for 5 mins. I brush on some butter and place under the broiler for about 1 min or less even just long enough to brown the top and serve hot.
