What's for Dinner tonight??

Well, went with an old favorite of the Bodyguard.

Chicken Mole

Boil 1 whole chicken, now you can either reserve in pieces on the bone, or remove the bone and cut in large pieces.
Reserve liquid. I season the water with Bay leaves, Comino, pepper, paprika.

I cheat and use the concentrate Mole in the Jar. Add 4/1 of the chicken broth and add the chicken. Sprinkle with sesame seeds when serving.

I also made homemade refried beans, BUT I use Chorizo and fry that, add the beans, cook down and add jack cheese on stirring when mashing.
I soak the beans overnight, then cook in crock pot or regular pot or pressure cooker until done.
Season with Comino, pepper and salt to taste WHEN the beans are tender.

On the side rice, browned in oil then add 1 stalk celery diced, and 1/2 diced brown onion. Cook now until onion and celery are translucent, then add small can fire roasted tomatoes, cut up in can, and liquid from the chicken. (2 cups rice to 4 cups liquid.)
Do not skip the browning of the rice. IMPORTANT STEP.
Cook on low 20 minutes, then add a handful of peas and put the lid back on for about 10 minutes.

Serve with corn or flour tortillas.

Making the sauce from scratch is a pain in the ass.

Well as good as that sounds I went with Mikey's T-shark recipe (cilantro, garlic and olive oil) grilled it up and landed it in a few corn tortillas. YUM! I am sure glad Ali landed that fish.

Yes, mole sauce from scratch requires TONS of grinding of seeds and nuts and spices.
Darn Babu, when you gonna fix me that garlic chili chicken?? Looks WONDERFUL.
