Abalone Fritters

1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 red bell pepper, diced
1/2 large vidallia onion, dice
1 Tbsp minced garlic
1/2 tsp seasalt
1/2 tsp black pepper
1/2 lb thin sliced and pounded fresh abalone
1/2 tsp baking powder
Selfrising flour
Deepfryer or deep cast iron skillet and your choice of medium temp cooking oil(I used canola)


Put all veggies in the bottom of your steamer and add just enough water to cover them. Placed the sliced, pounded abalone in the steamer basket and steam until veggies are cooked and soft.

Ensure any juice in the steamer basket goes into the water with the veggies. Set veggies/water aside to cool.

Chop the ab into small bits and add to the water.

Now start adding the flour slowly until you get a hushpuppy type thick consistancy, similar to a loose cookie dough. Fold in the baking powder and let stand for 10-15 minutes.

While the batter is rising, heat your fryer or oil to about 325. Once you're hot, spoon dollops of batter into the oil and cook until golden brown. Remove and let dry on paper towels.

I liked em with just some malt vinegar but tarter or cocktail sauce will do the trick.

You could probably sub cornmeal for flour to make abalone hushpuppies or you can add some sugar if you like it to be a little sweeter.
