Mako Tacos

Cut your mako into taco sized pieces. Remove all lateral line tissue (the red shit).

Marinate in:

1/4 cup olive oil
juice from 3 large limes
1 tbs of chili powder
1 tsp of ground cumin
1 tsp of oregano
1/2 tsp of cayenne pepper
1 tbs of Tapatio, Pio Pica, Valentina's, or some mexican hot sauce
1 tbs of kosher salt

Whisk all together and marinate the shark for 4 hours.

Grill over hot charcoal.

serve in warm corn tortillas with fresh homemade salsa (see my recipe) and shredded jack cheese

If you are gay, you can put some of that slimy white, yougurt sauce stuff on there, but I hate that shit.

Wowww… Nate,
Besides custom rods, I see your quite the culinary type. I saw your ceviche post, try replacing the chopped fresh jalapeños with copped canned jalapeños and add copped canned pitless green olives. I prefer albie or sierra for ceviche... But almost any good fish is good.
