The original thread got lost in the upgrade so I'm posting it again.
I do the usual "el natural" BBQ style with most fish. I'm looking for more interesting ways to do halibut such as baking. etc. What's your BEST way to cook halibut???

Cut it into bite size pieces or a little bigger. Boil it, Dip in melted butter like lobster. I call it "Poor Mans Lobster". Havent caught a halibut in years but I remember it used to taste alot like lobster.

Preheat oven 350. Beat 4-5 eggs whites, depends on size of fish. Fold in 1 cup of mayo, 2-3 tablespoons musturd, onion powder, garlic powder salt and pepper to taste. Spray baking pan. Smear one side of fish with egg mixture, lay in pan egg side down, cover fish with remaining. Bake approx 20 min, until light golden brown.

blend together, black pepper,white pepper,cayenne pepper,equal parts.Also dried rosemary,basil,thyme,oregano,garlic powder,(not garlic salt) onion powder.If onion powder cannot be found,finely grated fresh onion can be added later.Increase amounts if yo're cooking larger amounts of fish,etc.Add worcestershire,soysauce,tabasco,lemon juice,and about a cup of parmesan cheese,along with a couple sticks of butter,not margarine.Soften the butter till it is creamy. Add the grated onion,and blend all ingredements into a paste.Rub liberally all over your fish....Not that,you pervs!!! THE HALIBUT!!!! SHHEESH! Anyways,you can sear fish in a hot iron skillet (lightly,don't overcook) bake in the oven,or charbroil over open flame, which i tink is da greatest.when feesh is dun,while it is still hot,slice it on top of a salad sprinkled lightly with a good quality ceasar, or italian dressing.it's awesome.Try this with ahii,ono,hamachi, etc.

The way i like to cook mine. it's simple, fast and taste great!!! Make a nice fresh salsa... I like to use onion, tomato, cilantro, serrano chili, garlic salt, oregano and radish (of course you need to add the juice of a lemon or two to the mix)... Let sit for about an hour so the juices will blend together real good (thats where the flavor comes from)... Place your halibut steak on a sheet of foil and scoup a large amount of salsa over the top. Fold the ends of the foil up to create a space for the steam to build... Place it on the BBQ for about 15 to 20 min and walla!!! easy and good!!!

Here is my family's favorite. Cornflake Crusted halibut
. To crush the cornflakes, place them in a zip-top plastic bag, seal, and press with a rolling pin.
Aioli: (like French tarter sauce)
2 tablespoons minced fresh cilantro
3 tablespoons mayonnaise
1 serrano chile, seeded and minced
1 garlic clove, minced
Fish:
1 cup milk
1 large egg lightly beaten
2 cups cornflakes, finely crushed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
4 (6-ounce) halibut fillets
Lemon wedges
To prepare aioli, combine first 4 ingredients, stirring well.
To prepare fish, combine milk and egg in a shallow dish, stirring well with a whisk. Combine cornflakes, flour, salt, and black pepper in a shallow dish.
Heat oil in a large nonstick skillet over medium-high heat. Dip fish in milk mixture; dredge in cornflake mixture. Add fish to pan; cook 4 minutes on each side or until fish flakes easily when tested with a fork. Serve with mayonnaise mixture and lemon wedges.

Boil it in 7 up and dip in melted butter and garlic. 3/4 inch cubes, keep em in there till they float a little then put em in the butter and garlic.
The more butter and garlic the better. Last time I did it a little overkill. A large fistfull (I mean like a full fistfull) of garlic sliced and diced and minced real small, and 2 sticks up butter... I had it that night and it was OK... But the next day I fished/worked on NCP and around 9 am popped it in the oven, heatted it up and it was DAMNNNNNNNN good.... I think its better the second day....

Try this, there are many variations to this recipe. I have been on a diet and cant eat fried fish, which is my favorite.
In a glass baking pan, spray w/ Pam
Slice onions thinly and layer the bottom
put down two fillets
stack(sliced) onions, mushrooms, tomatoes, baby spinach, bacon, ham slices, just about anything you like.
Put on another fillet
more sliced onions, and mushrooms
Then cover it good w/ parmesan cheese
Bake in oven 375 for 30 minutes.
Most Excellent, caught 5 legal hallies on Sat and had this for dinner Sunday for some friends. It is a very beautiful plate.
