Great T-shark recipe

I've been playing around with this one and it just keeps getting better. Seems like prep time is heavy but it's really not.

Take a couple of large steaks about an inch thick and put them in a pyrex baking dish

The marinade;
1.5 cups orange juice
1/4 cup soy sauce
2 tablespoons oriental sesame oil
2 tablespoons chili oil
2 tablespoons minced peeled fresh ginger (read cheese grater)
2 tablespoons minced orange peel (read cheese grater)
1 teaspoon rice vinegar
Big Pinch of cayenne pepper
Big Pinch of sugar

Pour over da feesh, flip fish to coat both sides, cover and back in the refer
for a couple of hours, turning once.

When you are ready to cook the shark, remove marinade from pyrex dish and transfer it into sauce pan.

Toss the shark in the same Pyrex dish in the oven @ 350 for a half hour

The side sauce;
While the fish is baking take a stick of real butter at room temp
add the shredded peel of a lime, then the juice of the lime, a half bunch of cilantro chopped super fine, a pinch of garlic, some crushed red pepper, black pepper and sea salt to taste. Whip that stuff up until it's fluffy.

The topcoat sauce;
About five minutes before the fish comes out of the oven, boil the marinade in the saucepan until it reduces down to almost a syrup.

Shark comes out of the oven, spread a thin coat of the orange sauce across the top and serve with whatever side dish blows your skirt up.

I like the lime butter on the side.

I have baked, broiled and BBQ'd this, pretty much can't go wrong.
