Chef Jorge's Wahoo Chowder

Thought I would post this in honor of Jorge's recent passing away. Enjoy it's awesome.

Jorge’s Wahoo Chowder

3 Large potatoes cut in cubes
1 can corn
1 cup diced celery
2 cloves garlic
1 large onion diced
¾ teaspoon salt
1 bay leaf
¼ teaspoon pepper
4 cups half and half
¼ cup butter
¼ teaspoon dill
2 Cups water
2 pounds Wahoo Fillets cubed
½ cup white wine
1 tablespoon chopped cilantro

Combine water, wine, vegetables, spices and butter. Bring to a boil so that potatoes are ¾ cooked. Add Wahoo, cook 5 more minutes and add rue to thicken mixture for a chowder consistency.

Rue: ½ cup butter and ¼ cup flour: Melt butter and add flour to rue consistency.

You can make it with any firm meated fish. Swordfish and Yellowtail make it good as well.

I bet it will be close but not the same. Guys like him always had a little secret something. Not to mention being on the ocean where everything tastes better.
What a great guy he must have been. I read all the posts and felt like I kind of knew him. God bless his family and friends.

Just finished up some soup today for the second time and just had a bowl, im stuft. Made up a batch today Billy. i also made up a batch last week. The stuff is sooooo good. I have 5 small glad containers full of leftovers. We ate every bit of the soup last time.



thanks for posting up the recipe Bill. Ive been wanting it since the first time i tasted this soup. The best soup ive ever had. Mine turned out tasty, again, but not as great as Jorge, again.

Jorge would be proud.
