SeaSlut, you called it right. It's a hardhead, and no they are not poisonous to eat. They do however have some type of poison or enzyme on the barbs that will hurt like hell depending on how sensitive you are to it. Folks who are allergic to bee stings should be careful handling these fish.
In Louisiana, they are pretty much considered a trash fish, which is not very accurate in my opinion. I'm not a fish snob, so I enjoy catching any fish that happens to be biting at the time. I can't even count the times when nothing else was biting, but the kids had a blast catching hardheads.
There are some things to keep in mind if you want to eat them. They seem to have less meat than a channel cat of the same size, the meat can be off color at times (yellowish), and it is best to trim the fat from the fillets. I soak the fillets in salt water over night, my grandpa used to soak them in milk. The most important thing is not to overcook them. If you do that, then you'll think you're eating cotton. Like some other types of fish, it takes proper preparation to really get the full benefit from the taste.
Eveyone will act like you're crazy to keep them, but they know they've eaten them too, but it's just not popular to admit. I say just have fun catching them, and try not to pick up the bad habit of the locals throwing them on the bank to die or gutting them and tossing them back into the water. Hope this helps.

Hardheads are actually pretty good eating.. i prefer them to sailcats.. there not poiseness.. to eat.. but do carry a bacterial toxin on there barbs.

I won't lie. I caught a 3lb'er once in the surf and fried it in cornmeal batter. It was good. It wasn't great or excellent, but it was tasty. I like gafftopsail cats better. Some crazy kids in Florida lick them???? Something about halucinagens.

We are on little gasparilla til the 28th.
Fishing is turned off. Right now we're surf fishing but open to suggestions, include grid.
