| When to bleed/gut
How do I know when to bleed and/or gut fish that I've landed on my boat? On cattle boats, it's the last thing done before heading back into the harbor. I have filleting down but I'm not sure about the bleeding/gutting technique. Any thoughts?

| Bleed and Chill
Bleed your fish as soon as you can rip some gills out  I submurse the fish in salt water mixed with lots of ice and lower the body temp ASAP. No need to gut fish you are going to fillet  Rock fish I just put in the bait tank and it's running. Then fillet them when we get home, we don't bleed/ice them down, just the Yellowtail and Tuna

Thanks, glad to be here. I'm trying to get used to the site. It's a little different than some of the others I've been on. Still fumbling around a little.
How do you bleed you Yellowtail & Tuna? Just cut off the head or make a cut under the chin?

I firmly believe it is AS important to ice Albacore down in a slushy salt water/ice mixture.

Cutting off the head kills the fish. The point of bleeding is to get the heart to do the work of removing the blood from the fish. Blood rots the meat because it takes a long time to cool down and it doesn't taste particularly good.
As for actually bleeding, you don't need to rip out all the gills. It's better to just break one and let it work slowly. A knife or a pair of shears will do the job. Let the blood wash out over the side of the boat, or put it in the ice chest and drain the chest within an hour.
I usually bleed most fish I catch, but there are exception. Reef fish do not have much blood because they have a mostly sedentary lifestyle, so it's not necessary to bleed bass and rockfish. Migratory fish, on the other hand, lead the life of an athlete, leading to the need for more oxygen and therefore, more blood. More active fish typically have more blood, so tunas, yellowtail, and dorado benefit the most from bleeding.
Tuna, for certain, need to be bled. Unlike most fish, they're warm blooded, so any tuna you catch, whether it's albacore or skipjack, should be bled for certain.

Good idea to use the scissors or side cutters. gills can be sharp. Ripped my finger pretty good on a Yellowtail last year.
