Another way of removing the mud vein that is pretty simple is to take a pair of scissors and dive them into the tail just above the pooper opening (you are cutting deep enough to slice through the vein. Now you can go to the white meaty flesh side where you have removed the tail from the body and simply pull the mud vein straight out.

Thanks for the post. I have been using your meathod of soaking the bugs in ice water to calm them down, especially the bigger ones. It works great! I was discussing this method with a guy at the tackle store and he claims that putting them in fresh water loses the flavor in the meat. I havent noticed any difference possibly because the only bugs I have used this on were caught in long beach and dont taste as good anyways.

Is there any truth to this??

My guess would be that the salt is left in fresh water, which can change the taste!

I do the bugs the same way with the old antenna enema, than I clip off the thorns on the tail and I vacuum pack the tails. It's very rare that I eat them during the season. I mostly eat them when the season is closed this way I am not wanting them while they are out of season.
