Awsome post Steve. If I may add something too...

I use the red plastic cups (Costco) we use to fill beers with at a keg party to store

the bug tail. I fill em half way full of water and put the meat end down which fills the

cup the rest of the way. The meat is coved in both shell and ice which eliminates

freezer burn and is way faster and cheaper than vacuum bags. Easy defrost too.

Ahhhhhhhh...pretty swift idea...I know people that do their fish fillets like that also...in water...does avoid the freezer burn!

Save a step...instead of breaking the antennae off, just poke it through pointy end first, and the guts will come out of the front of the tail. I saw a guy go thru a whole bag of bugs that way once. Almost a single smooth motion...twist, poke. He had them tailed and cleaned so fast it was silly.

Steve, I pretty much do the same but I also take the meat from the base of the anteni on a nice bug same meat as in the tail. Ray

Anyone besides me try smashing the bodies up and freezing them for sheepshead chum? My buddies think I end up feeding all the sheepshead and making them full, but I think they work pretty well.

to me, it's hard enough getting lobsters so when i have them, i use every part of them, including the head and antenna. it's a little bit of work, but the is a lot of meat in the juncture where the legs meet the body as well as the antenna. i personally think the antenna meat is the sweetest, but that's just me. i also enjoy the goop inside cuz it tastes like the goop inside of a crab. again, that's just me, cuz that's how we do it back in vietnam and it's just something you develope a taste for when you're young. that andrew zimmern guy on cable loves it too. as far as cleaning, i also do the twist, only i use a towel to hold th bugs so they don't cut me up. i will start using the ice-down method though. thanks for the tip!
