Here is one that alot of people make, alot of people hate, mostly because it is dry and flavorless, try this one then you might certainly change your mind.

Good Ole American (this aint your grandmas) Meat Loaf

2 Lb Ground Beef
1 Lb Ground Pork
1/3 (more or less) Bacon
2 slices sourdough bread- torn in small pieces or cubed
2 Large Ribs celery diced
1/2 brown onion diced
2 eggs
1-14oz Can tomato sauce-1/3 of the can reserve the rest for topping
1 large can sliced mushrooms (can be omitted)
1/4 cup fresh parsley (you can use dried, but use about 2 tablespoons)
Variety of dried herbs (I use herbs de provence, but you can use thyme, bay, rosemary, etc) about 1 tablespoon
1-2 Tablespoons Worchestishire Sauce
Salt (this is ground
Fresh ground black pepper

No other way to do this but with your mitts, so get a large mixing bowl and mix away.
Add all the ingredients, with the exception of the bacon and only about 1/3 of the can of tomato sauce, reserve the rest.
Mix all well then in a large roasting or deep baking pan shape the loaf, leave ROOM all around. It should be oblong about 5-6 inches wide by about 10-12 inches long.
Now place the bacon strips on top lengthwise to cover entire loaf.
Now drizzle the tomato sauce to coat the bacon.

Place in preheated 350 degree oven covered for about 45 minutes. Remove foil or cover. At this point, due to the large amount of fat accumulated around the loaf, get a baster and remove the fat. You can tilt the pan and spoon it out too, but the baster is much easier.
Now place back in oven for about 45 minutes to an hour, drawing out fat when necessary until top is browned well.
I usually serve with a baked potato, place them in oven when you have about an hour left right along side the roaster.
You CAN when there is about 30 minutes to go, surround the meatloaf with carrots and cut potatoes, season with salt and pepper. They will roast up nice and tender.

Now this will serve 6-8, but this makes GREAT sandwiches. Slice about 1" thick, place on sourdough with mayo, dijon mustard, some lettuce, and if you like very thinly sliced red onion.

You can also make a brown gravy in the pan (use a mix and just stir it up in the dripping of the pan when you remove the meatloaf to a tray). Serve over the roasted potatoes.

This is very moist, very flavorful, the bacon, pork and tomato really add the goods. NO OATMEAL PLEASE,even though it is a binder, that is what the sourdough does, but no mushy goo.

We cook our preaty much the same way, but use Hernandez salsa instead of Worchester, and Jimmy Dean hot sausage. You can also add peppers, etc. which we omit do to the kids. If you like it spicy, you'll like this as well.

The salsa is a good change--I would use it in place of the tomato sauce. If you can't find ground pork, yes sausage will do, you might want to omit some of the salt and herbs, as sausage is well seasoned.

Dennis and Sir Gordo, this is NOT fattening.Just meat and veggies. Remember you are removing all the fat- No carbs or very little with the 2 slices of sourdough for the whole loaf. Dont roast the veggies with the meat, have the baked potato but instead of butter and sourcream, use steamed broccoli seasoned with some lemon. Omit the gravy. Great for any low carb, low fat diet.

I love your recipes. I will see if my mom still has the original recipe for munster cookies. Its a potpourri of goodness.....in the pounds. Like pounds of peanut butter, choclate chips, m&ms and oatmeal. My mom had to reduce the original recipe four times to get a normal amount.

I would like to see her "reduced down " recipe and also alot of these old recipes change by baker/mom/recipe

1 doz. eggs
1 lb. butter
2 lbs. brown sugar
4 c. white sugar
18 c. oatmeal (old fashioned)
8 tsp. soda
3 lbs. peanut butter
1 lb. M & M candy
1 lb. chocolate chips (unsweetened)
1 tbsp. white syrup
1 tbsp. vanilla

Cream eggs, butter, sugars, soda and peanut butter. Add remaining ingredients slowly and mix. Drop by tablespoon onto cookie sheets. Bake for about 12 minutes at 350 degrees. Makes a monsterous batch of cookies.
