It's pretty tasty actually. The way I make it is in coconut milk with mustard greens or fresh spinach and some type of pepper, (chili, jalapeno, habanero), depending on how spicy you like your food. Simmer until the greens are almost done then add the ray. Good stuff.
We used to eat it all the time when I lived in Singapore. We would cut the gings off and then fry them in garlic, green onions, black bean sauce and seasme oil. Man, my mouth is watering thinking about it. Out here I would eat rays but leave the bat rays alone.
