Albacore marinated in a combination of sushi rice vinegar, soy sauce, dijon mustard, and sesame seeds. Marinate for about an hour and then sear all sides on a very high heat. Very simple and very tasty. A sushi chef friend of mine taught me this trick for preparing albacore sushi. Albacore is a loose fleshed fish and the searing makes it easier to cut and gives it a great flavor.
1 part sushi vinegar
3 parts soy sauce
2 parts dijon mustard
2 parts sesame seeds.
marinate and cook. That's it

1 cup soy
1/2 cup teriyaki
dash of lemon juice to flavor
1/3 cup maple syrup
fresh cut onions, peppers,garlic. Put 1" thick filets/marinade in ziplock in the fridge for 1 hr.
High heat on the Q for 2-3 min per side. Ummmmmmm

First favorite:
Roll in a little olive oil, cracked black pepper and sesame seed. Sear on all sides ( partial loin) remove and wrap in plastic wrap and chill.
Seared sashimi.
Next:
Cut into 1-2" cubes. Marinate in Teriyaki sauce for about 1 hour. Wrap slices of bacon around albacore, skewer and grill adding a touch more marinade when turning.

Roll loin in chopped fresh cilantro and fresh basil
Sear in olive or peanut oil, Smoking HOT iron skillet 5-10 sec per side
cool, slice as thin as possible place on plate(Make it Pretty)
serve with equal parts, juice of 1 lemon, soy sauce add sesame seed oil(8-10 shakes) and wasabi(to taste) wisk together and pour on plate.

coat tuna loins w/ mixture of olive oil, tequila, cilantro, cumin and garlic
wrap in bacon and glaze w/ honey (to keep from drying out)
grill
top with salsa made with pineapple, mango, cilantro, red onion

I hate albacore, but this thread has me re-thinking....
DON'T EAT IT RAW. It can make you VERY sick and possibly kill you. It's not likely, but it's not worth the risk.
There's a reason why sushi bars sear the stuff.
