Guitarfish

I have been catching a lot of these guys lately as bycatch while targeting flatties and releasing them all not realizing that they are regarded as good eating. That leads to several questions. How good are they really? What parts do you eat? Best ways to prepare? I fish once or twice a week and throw back way more than I keep. Love variety and extremely fresh fish so I want to learn about this fish as a possible addition to the occational keeper list. Thanks in advance for the eduacation.

Lose the head and fillet the tail, cook like scallops, very tasty when cooked right but tastes like a tire if over cooked

Like Karlisle said, lop off the head and you can pretty much slice it like thick slices of bread. From there a lil ol bay seasoning and onto the grill. Give it a splash of fresh lemon when you turn it.

Can't go wrong with a flat shark.

Thanks for the info. Will definately have to give it a try next time I get a decent sized one. Should have figured they taste good. Many of the wierdest looking fish do.

I catch a lot of them to and was wondering what they tasted like but I couldn't kill one, they look so helpless when they smile at you

No more Guitarfish recipes? i'm starting to see more of these come up at the HB pier and was given a nice chunk of one last night. I marinated it in Italian dressing and Chardonnay and baked it in the marinade, then rolled it in melted butter when it was hot out of the oven. Was really good, but would like to have a few different recipes.
