yellowtail collar

I had a yellowtail collar the other day at a local sushi spot by my house, was wondering if anyone knows the proper way to cut an cook one?

i soak them in teriaki sauce for a day

skin side down on a bbq grill on medium-low heat..
you'll see the fatty meat start bubbling..
eat with chopsticks when you can start picking out the meaty sections..

I've taken a whole yellowtail head and split it down the middle from top to bottom. Marinate in teriyaki and BBQ on both side. You'd be amazed at how good it is and just how much meat comes off the head. There is cheek meat, of course, but around the jaw there is a ton of smaller muscles around the individual jaw bones. You just sort of pick it apart with your fingers and then slurp the meat off the little bones (it sort of falls off kind of like well done chicken wings). One half head from a twenty pounder would feed a woman, and two halfs would feed a man. Try it.
