I hear PETA is starting
a Fish Cook Book, here's
my contribution for grilled
Baby Yellows and Bass:
Leave whole, but gut and gill
'em. If they still haven't died,
bang 'em on the floor a few
times. Then clean and scale 'em.
Remove upper and lower
fins from bass.
Cut side slits and fill with
chopped herbs, garlic,
olive oil, salt and pepper.
And lemon wedges for
effect.
Do the same for your
bass, or any fish you
wish to eat whole.
Now lather up with fish with
olive oil and lots of salt.
Clean grill and clean with
paper towel soaked in
vegie. Now your ready
to cook
Hot off the grill, soak
the plated fish with
a 2 parts lemon, 1 part
olive oil mixture. Traditional
Greek marinade only has
olive oil, lemon, pinch of
oregano, salt and pepper.
Mine has fresh parsely
and garlic.
This mixture must be
mixed throughly. That's
why I make it inside a
plastic jug. So I can
shake, shake, shake.
