Smoke with with a regular BBQ

OK I have some tuna I want to smoke. I have the chips, brine recipe, and all the info from 3men.com. I did a search but cannot remember directions on how to make a regular BBQ a smoker. I have a gas BBQ AND a charchol BBQ that I can use. I think I remember something about soaking the chips in water then placing them in foil in the fire?!? any help is greatly appreciated...thanks!!

If you use mesquite charcoal its easier with a charcoal burner so you don't make a mess of the gas
indirect heat
pan of water over the heat
soak mesquite chips for 20 minutes put in foil and puncture. Use plenty
If you have one of t hose fire starter chimneys use that to get your coals ready.
oil your grill so the fish wont stick
1. start fire in chimney
2. dump in when ready.
3. dump in foiled mesquite
4. set grill rack and put the water pan in it
5. place fish on the grill away from the heat
6. close lid and don't open for at least 30 minutes more like 45 though if you want to check it.
That's one way.

try your charcoal bbq with mesquite charcoal (not the kingsford stuff) stacked to one side. I don't use a whole lot, just enough to get some coals and a little heat. soak some chips/chunks in the meantime. when the coals are ready, i put the chips directly on the coals - you can do the tinfoil tray (trayscool hahahaha) if you want
i put the meat most of the way to the other end of the grill after that, and keep adding chips as needed. just don't let it get too hot, or you'll end up cooking, not smoking. hope that helps - somebody else will chime in with some tips, i'm sure

ok so the pan of water goes where?

also I want the coals to be on the cooler side of things when I start correct?

ok its goin but the damn chips keep catching fire. im dumping water and more chips to slow it down....temp is going between 170-220 or so depending on the fire!

OK turned out good BUT make sure you rinse the fish after the brine. i didnt since i wanted it to be a lil salty per 3men.com BUT its a little to much. Happy smoking!

They sell a little iron box that holds wood chips and is made for gas bbq's. You soak the chips and put them in the box. Throw the box on the grill and it smokes. Simple. It's not anywhere close to a real smoker, but gives the meat a smoke flavor.

You can also use a spray bottle to keep the flames down on the chips - or soak them longer
