| How to cook the bonita?
I was given some bonita caught on a charter boat. They were left in the bag all day, maybe bled, then fillet'd then frozen with the blood line still in them. Is there any saving them, and if so how do i prepare?

in a bait holder for a lobster pot...
they are best when bled, and put on ice right away. sitting in the gunny sack in the sun all day is no good.
otherwise, i just boil the fillets for a 5-10 minutes, then let it cool, then make your typical tuna salad recipe (mayo, pickles, onions...etc). you'll be amazed at how awesome it it.
we get nay-sayers on the boat ALL the time...then we feed them fresh skipjack tuna salad and it changes everything.
bonita and skipjack also make good poke and sashimi...just need to take good care of it

Deep fry them. cool then shred into pieces. refridgerate overnight following day, prep mashed garlic and finely cut onions into pan with stick of butter. Brown the garlic and onions then add some (banana sauce --asian food store has this spicy or not) add some huli huli sauce (hawaiian stuff) finally add the shredded bonita and there you have it. "Bonita butta" Used to make this for work and occasionally for when I went on the boats my friends loved it.
I made this stuff up when I had some leftover fried bonita and it became a classic to those that knew me. Bonita butta
It's basically meant to be eaten with crackers though. Like a fish dip Great when served cold.

Dice into small pieces and place in cat bowl.
OR
Mush well and place in Lobster net.
Maybe smoked... maybe.

if not bled and handled properly then not worth eating. i love bonita as much as any tuna but it has to be handled properly or it goes to shit... quick

yeah a lot of people don't realize that when you buy a can of chunk light tuna (the can that doesn't say albacore)...what kind of tuna do you think you're eating? i gurantee it is not bluefin. all chunk light tuna is either skipjack, bonita, or sometimes yellowfin.
there are long standing traditions saying the bonita is a bad eating fish (bogus). but if it is not treated well, like any other fish, then it's garbage....like any other fish
