Albacore

OK so I have 1200 pounds of albie, Yellow Fin Tuna and Yellowtail in the freezer and my wife is having a potluck at her place of work.

I'm sure it's sacrilege or heresy, but does anybody have any albie recipes that can be done in a crockpot or pre made and warmed in a crockpot or oven that might be presentable?

OK Ron Here we go this is easy and it Can be warmed easily.


Gonna need a big non stick frying pan.




Put a tbsp of olive oil in pan and med. heat.


Take your loins cut in half(or whatever length will fit pan)

brush with olive oil and coat with sesame seeds
put in frying pan.

Cook only about 3mins. and flip cook 3 more mins

Generally I would say it will take 2-3 more mins on each side to complete but since it will be re-heated finish until almost done.


Here is the finishing touch.

1 tsp dry wasabi and 1 tsp cold water mix let sit for about 10 mins or so then add 2tbsp of heavy cream mix really well.

Brush this all over the finished fillets and serve. Also finely chopped green onion if you are going for presentation points.

It was a good year of fishing....it will all be gone by the end of May when the first trip of '10 leaves the dock...

Heres a good semi-smoke recipe, that you can put in crock-pot after done to warm up and serve to your guests.

Brine loins in a mixture of water and soy sauce and desired seasonings for 24 hrs.

Take charcoal grill and light a small pile of bricketts in center

Surround with water soaked mesquite

Place brined loins above the water soaked mesquite and kind of near the middle hot pile of coals

Cover with top of BBQ and let the wood start to smoke and cook the fish

Remove fish when done cooking

Turns out smoky and delicious... toss in crock pot and bring to guests, can serve warm or cold... also can mix with mayo, etc to make a lil smoked tuna salad
