Roxy Wahoo recipies

I have lots of big Wahoo chunks!!! I need your recipies please!!!! I know Bill's favorite!!!

Make a foil packet. Add wahoo chunks, a pat of butter and a drizzle of olive oil. Sprinkle with kosher salt and cracked black pepper. Seal and put on bbq, off heat style until fish flakes, about 15 minutes, plus or minus dependant upon size and thickness.
You can add to the packet fresh herbs, and sliced onion, minced garlic if you like.

Marinate fish in olive oil, white wine, minced parsley, old bay and cracked pepper for about 1 hour. Skewer between chunks of pineapple. Grill baby Grill.

You can marinate the steaks and grill them. Wahoo should not be overpowered by sauces and heavy flavorings. Simple is best.

Parmesan/chiliflake is the best Wahoo everrrrrr.

Preheat oven to 450 (I know that might seem high but trust me).
Using a light mayo mix in chiliflakes and parmesan cheese, the more the better.
Bake the Wahoo 1/4-1/3 the way through.
Remove Wahoo and spread the mayo parmesan on the tops of your Wahoo chunks.
Place back in oven.
Bake until mayo encrusts/browns a touch.
At this point the Wahoo should be ready for removal.
Let cool down and enjoy the best damn Wahoo ever.

I'm going to try this, I usually do my wahoo plain, I have alot so I want to try everything. I had some smoked it is so good!

Ummmm, I'm glad you enjoyed. Wahoo is real easy to overcook and then it is pretty much worthless, I think the mayo helps keep it moist and creates a really yummy encrust (if that's even a word).

Now I really want to try Roxxxyyy's method, lord knows she doesn't mess around.

Well, I might mess around some, with Bill that is!! . As for the parmesan and mayo. Makes a great crust as mayo is egg yolks and oil. Browns nicely. Try that recipe on chicken also. Mayo/parmesan on bread for grilled sandwiches in place of butter is awesome too!
