I dont think there is any best way, so many killer ways how could we choose just one....

This teqnique is tasty. Please excuse the redneck gourmet kitchen...

Split tails, a pat of butter and a little light olive oil, dust tails with a little cajun spice (paprika,white and black pepper,garlic powder,rosemary,thyme,basil) Just a little dont want to cover up the taste of the lobster. I think fresh garlic can overpower the lobster a lot of the time.

Cook em up over a just over medium to high heat shell side down first.

Flip when it feels right, I really try to not overcook (made mistake so much in the past)

Let the meat side cook a little then add some white wine, this really brightens the flavor and make it pop, you can really taste the lobster.

Cook till just right and plate, sometime I like to eat them plain, sometimes I like tacos.

I'm taking off from work Thursday and Friday. After this reply im hookin the MAHNANA for some hoopin.
You guys gave me so many way to cook lobster, I will need to catch my limit a few night to try them all.
For fun only!!! Each time I prepare the lobster a new way I will have all that try it rate it. Scoring: 0 to 5 rating or maybe a 0 - 10 the higher the number the better the dish. Take the numbers and avg them then post it. I will start with the first one in the Thread.

P.S. Dust Devil did your wife make you cook it outside because of the smell?

From the owner of the Fish Company Restaurant in Los Alamitos (his fish market buys commercial fish from me).
Devein by stick antenna up lobster's ass (as mentioned before). Split the tail SHELL on top and carefully pull the meat up so it rests on top of the shell. Place tail w/meat on top on a cookie sheet with a little water in it. Bake at 450 for about 8 minutes (depends on size) then baste with drawn butter and bake another 4-5 minutes. 5 star recipe from a 5 star fish restaurant.

If I want to impress somebody, that's how I do it.

Puerto Nuevo style kicks ass its pacific lobster I think it needs to be in a tortilla with rice beans salsa and a nice cold Pacifico....thats the way i do it put it split in 2 and dumped in fryer for a minute or so...just my choice

I cook it outside cause of the smell and the splatter mess it can make, if you have a good vent hood over your stove you have no worries. It was nice weather so I went outside otherwise I would have just used the fan and cooked inside

I agree there are several awesome recipies in this thread ( Im so ready to try the stuffed and Puerto Nuevo!!)

Ceviche....really.....i have made lobster ceviche with and without fish......sculpin and lobster go real nice together....make it just like any ceviche................super good stuff!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

i split mine baset with butter put the split tails on a plank turn your oven to 375 bake for 12 minutes remove the plank with tails on them. next throw the tails away squeeze some lemon on the plank and eat that plank right down its the best fiber you could ever eat scouts honor

so much for one of my favorite secret recipes,if you havent tried smoked lobster,try just one, smoke it like you would a piece of albacore or yellowfin use hickory chips and a little charcoal do not get it too hot,smoke maybe 3 or 4 hours low heat,its pretty good,do just one in case you dont like it.

With your looks, I doubt it would ever get ugly. No worries.

Lobster option,

Pre-heat oven at around 375 degrees. Remove vein, cut in half and rinse with clean water, rub olive oil on raw meat areas, place in a round pie pan shell down. Season with old bay seasoning or cajun spices and lastly sprinkle a lite amount of Jamacian Jerk spice. Cover with foil. Depending on size, cook lobster from 10 to 15 minutes. Melt real butter, grab some icy chilled quality beer and enjoy.

Two bugs Thursday

K, got home about 4:30 am Friday and tailed the two bugs also took the legs off and used the antenna in the poop shoot for the removal of the crap line (Works Great thx for the tip) then stuck them in the fridge.

Next night i took my wife out Friday night and i got skunked for the 1st time. We had about 5 shorts and this jerk was drifting @ night in mission bay and took out one of my nets (I use the flashing LED glow sticks that you get at Home Depot in a milk jug you can see that ez) i was yelling @ him but he was oblivious to what was going on then started his motor then wrapped my shit around his prop. took about 15 min for me to get it out (he said he didn't want to get wet) had to cut my line. Around 12:00am the fog came in, so we came home.

Saturday night my son wanted to try the tails cooked on the BBQ......so.....

Added Butter, Garlic, Salt and Pepper on 2

Wrapped them in tin foil and BBQed them for a few min.

pulled them out of the foil and save the juice.

Grill for another minute or so with Avocado wood and normal coals.

Chopped them up and poured the pouch juice back over them.

Made tacos.. Topped with homemade beans that my wife made, homemade guacamole my younger son made, fresh chopped cilantro, onions and cheese.. this was Bad Ass.. i give it a 8 out of 10. i will cook all of the tails like the the last foil wrap (pepper dice was Habanero, Serrano, jalapeņo and thai pepper)next time.

Pop corning the legs

You guys that gave me the tip on pop corning the legs, well you rock! It was a family event all of us huddled around the nuk getting cancer. I found that you couldn't do the whole leg, that first 1/2" nub blocked the meat from escaping. We got it down after a 2 legs and in a few fun minutes we had a pile of leg meat goodness.

I will post picture next time i cook them.
