What type of oil is best used for frying Puerto Nuevo style? Peanut oil? Never made it that way but sure did like trying fried lobster on my last 2 trips to Puerto Nuevo. Yum!

Last time we did that, I believe we used peanut oil. But who knows what they use in Baja! Probably lard :P

I like to keep it simple. First get some good quality butter and clarify it by heating it in a small pan untill all the solids float up then skim off. Take some butter and mix with garlic, salt and whatever else you like.
Split tails in half and clean, or you can do the whole lobster in half for presentation.
Baste tail meat them place meat side down for 3-4 min, turn over on shell side and baste meat with more butter mix then cook for about 8 more min or till done.
Serve with more butter of course!!

You get that epic taste of the meat and keep it really moist. If you crave the BBQ flavor then steam half the time and finish on the BBQ but steamed is the way to go and never gets over cooked like baking or grilling can, and you are not marinating it in water with boiling. Basil in with garlic butter is a great topper.

Cut tails in half. Grill shell side down on BBQ until shell is nice and red. Put butter, salt and pepper on the meat as soon as it's on the grill. After shell is nice and red flip shell and grill meat side down for a minute or two.
Simple and very tasty. Steaming is a close second.

Lobster Sashimi is best!!! If you want to cook it, cut up the tail in chunks, add the brown part in the head add some butter and salt and cook it up in a fry pan... Don't judge before you try it... it is Delicious!!!

I spoke to a wife of a commercial lobster guy out of Dana Point. She told me that microwave was her absolute favorite way. Keep the meat in the tail and wrap it in a paper towel. Somehow it keeps the juices in and is excellent.

Here is the recipe for great loibster.
Make a boiling liquid by doing the following; 8 qt pan, water, old bay seasoning, carrot (rough cut) pepper corns, onion, and one lemon (juiced) then throw the peel in also. Let mixture boil to enhance flavor then boil the lobster at a full boil for 5-7 min. Serve with melted (clarified butter).
