my late Grandmother worked for van kamps on the tuna line here in San diego back in the 50's, I smoked up some yellowfin & skipjack tuna and had her try some, she was in her early 90's, I did not tell her which was what, I remember her saying, eeeww that taste like brown tuna / skipjack
laughed my ass off!
Skipjack is good sashimi, especially as poke. I think the entire state of Hawaii would implode if they didn't have their skipjack.
While on Kauai My son-in-law cooked up some Skipjack (breaded and fried) it was OUTSTANDING. He's a commercial fisherman (jig boat) and he'd rather eat Skippies than Yellow Fin Tuna.
Just make sure it's bled, keep cold and NEVER NEVER let fresh water touch the flesh.

And the last part of the process is to take the backbone of a freshly cleaned aku, throw 'em on the grill and eat around the bones. Unbelievably good!! That's Hawaiian style...
Dried aku is considered delicacy in these parts, too.
