smoked yellow tail

I smoked up about 40 pounds of yellow tail last weekend and the last batch ended a little dry so figured it would make a great dip. Only problem is i dont have a smoked dip recipe. Any of you have a killer smoked fish dip recipe???

celery, red onion, red bell pepper rmayo, a little sour cream, black pepper,
You can use this as a base and adjust it to your taste

in a mixer, mix 2 packages of cream cheese, then add the juice of two limes, and a little milk to thin a bit.
Add chopped fresh dill, parsley, chives (about 1/4 cup in all) and cracked black pepper then add about 3 cups of the smoked yellowtail. Mix well.
serve with bread pieces, crackers or toast points.

Smoked Albacore/Yellowfin/Yellowtail Pate/dip/spread

8 oz fish of your choice
8 oz cream cheese
2 oz plain goat cheese
2T mayonaise
2T fresh lemon juice
2T half & half or heavy cream

1T chopped green onion
1T chopped parsley
1T minced chives
Black pepper to taste

1/2t prepared horseradish

Pulse the first 6 ingredients in a food processor until smooth. Add the onion, parsley and chive and pulse 5 or 6 times to just blend...add the horseradish and pulse again about 5 times. Add black pepper to taste.

Garnish with smoked paprika and enjoy.
