If you insist on putting it in foil, you basically are steaming it. You can combine a variety of herbs, add a little white wine, some shallots, salt and pepper.
Close up the foil and bake or put on BBQ. When you remove you can make a variety of fruit salsas for the side. Mango, peach, citrus, any of these fruits, add a little fire roasted pepper and some finely diced red onion and lime and you are good to go.
Sans foil, sheepies make great fish tacos, or sweet sour deep fried, or work well in chowder.
