I like to take Duck or dove and take the meat off the breast bone. Wrap with bacon and Jalopeno. Be sure to deseed jalopeno. Wrap all together and put on BBQ on low. cook til bacon is crisp and bird meat should be done to medium. Also just before taking off the BBQ give a splash with your fav BBQ sauce.

My Quail, Pheasant and Chuckar are all skined and wraped with a layer of bacon to keep moist.

Ok now I am hungry and have to go make some......

after reading all these I guess it will be mallard and dove breasts for supper, have to start the marinade now to be ready in time, thanks guys I thought it would be a lazy sunday now I have to cook, oh well yum....

dove, quail and pigeon.. leave meat on the bone, marinade in white wine with garlic olive oil salt and pepper and lots of fresh sage overnite. when ready to bbq or roast or bake, take them and wrap them with not too fatty salt pork making sure all that sage gets in there too. slow cook and enjoy with Sauvignon Blanc and or good pilsner beer, salad and a vegee.

Take your duck breast filets and add cajun spices (Cayenne, Red pepper, black pepper, garlic powder) and a little flour. Put a small amount of olive oil in a pan and crank up the heat to hi on the stove. Sear the breasts on each side for 3-4 minutes. you want it blackened on the outside and pink on the inside. A little brown rice on the side with a cold one and you're good to go.

WHILE BIG GAME HUNTING (ELK) ALOT OF BLUE AND RUFFED GROUSE SIT AND LOOK AT US. OPPORTUNITY KNOCKS, SHOOT. Clean the bird, put in a plastic bowl with a beer for marinade. Next evening (24 hours) later place bird, beer and all in a skillet over medium heat and simmer until beer evaporates. Tastes great with potatoes or rice. Very simple and is a great day ender.

Dove, Quail or Pheasant in a deep baking dish with a lid. Cover with mushroom soup, add onions and peppers (bell, jalapenos, whatever). 400 for 40 mins covered.

I like my spotted owl in a Crock Pot with a couple cans of Cream of Mushroom soup over egg noodles...

Bald Eagle is better pan-fried.

(Substitute dove breasts for spotted owl; it's mighty tasty!)

For all game birds, after they're clean and split in half, deep them in eggs and then in a large bowl, mix 1/2 corn meal 1/2 white flour, salt, black pepper and garlic powder to taste! Toss them in there, make sure you cover them with me mix! Fry them in hot oil and you can't go wrong!
